Orange, Ginger, Carrot Muffins
I hate waste and try as often as possible to use up everything we have in the fridge. So after a few times of making wellness shots, I hate throwing away all the pulp. I knew it packed full of fiber and flavour. So I started using the pulp to make muffins. Use this easy recipe for a little spicy, but super tasting high fiber muffin.
If you can’t make muffins right away, you can freeze your pulp and defrost when you are ready to bake. The muffins also freeze well.
1. Ingredients
2 cups whole wheat flour
1 cup extra virgin olive oil
¼ cup water
1tsp sea salt
2 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
2 tsp vanilla
¾ cup brown sugar
2 cups pulp
4 med to large eggs
1 cup chopped pecans, walnuts or raisins (optional)
2. Instructions
Preheat oven to 350 degrees
Line 12 muffin tins
Mix flour, olive oil, water, salt, baking soda, eggs and sugar. Blend until smooth.
Add in cinnamon, nutmeg, vanilla, pulp and nuts (if using). Mix thoroughly
Fill muffin tin and bake for about 20-25 minutes
Let cool and serve.
